Grandma's Pumpkin Bread
This is my grandma's pumpkin bread recipe that she has used for over 50 years. Tried and true, there is a reason it has stayed in the family through the generations.
Grandma's Pumpkin Bread
(makes 2 loaves)
Ingredients:
3 cups sugar
1 cup vegetable oil
1 can pumpkin puree
2/3 cups water
4 eggs
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
3 1/3 cups flour
Instructions:
- preheat the oven to 350 F
in a stand mixer, combine: sugar, oil, pumpkin, water, and eggs
in a separate mixing bowl, combine: salt, cinnamon, nutmeg, baking soda, and flour
slowly add the dry ingredients (flour mixture) into the stand mixer. stir just until combined
oil two loaf pans. divide batter evenly between both pans.
bake for approximately 45-1 hour. i usually set the time for 35 minutes and if the edges are browning too quickly, i cover the loaves with foil and reduce the heat to 325 F for the remaining time.
